Abstract

Oxidative stress and hypertension play an important role in chronic diseases. Enzymatic hydrolysis of proteins is an alternative to obtain peptides with antihypertensive properties and natural antioxidants. The aim of this study was to obtain fractions from bovine hemoglobin concentrate (BHC) protein hydrolysates with concentrated antioxidant and antihypertensive properties. Four hydrolysates from BHC were prepared using different proteases and then were fractionated by ultrafiltration (MWCO: 5kDa). Antioxidant capacity (ABTS+ radical inhibition) and antihypertensive activity (ACE I inhibition) were determined on the ultrafiltered fractions. Enzymatic hydrolysis increased the antioxidant capacity and antihypertensive activity respect to BHC. Ultrafiltration process allowed to concentrate the antioxidant activity from different protein hydrolysates. However, there were no significant differences in the antihypertensive activity to justify the use of this process (p < 0.05)
