Abstract

The aim of citrus production in the Salto Grande region is fruit for the fresh market. There are no industrial products derived from biotransformation of orange juice in Argentina. The objective of this study was to obtain an orange sparkling wine from “orange wine”, by a second fermentation in bottles –as stated in traditional “champenoise” method– and study its technical feasibility. Orange base wine was prepared from orange juice inoculated with started culture adapted to the environment. Tirage liquor was prepared with Saccharomyces yeasts, sucrose and aids. The wine with the liquor tirage was distributed in pressure resistant bottles and capped with crown caps. The bottles were arranged horizontally in a dark cellar room and kept at controlled temperature. Once the second fermentation was finished, the aging process was developed, the bottles were riddled to facilitate settling of the yeast lees to the neck of the bottles, and disgorgement was performed. The wine supplemented with dosage liquor prepared with aged orange wine and sugar. Then the bottles were closed with corks and metal jaws. The orange sparkling wine contained 6,5 atm pressure, 13,27±0,52 %v/v alcohol; pH=3,46±0,04; acidity=9,39±0,04 g Cítric acid/l.
